I have the black 60G ipod and ive had no problems with it or itunes...i have over 10,000 tracks on my itunes library and probably 7,500 of those tracks on my ipod with another 22 Gigs of space to spare...
once you hook up your ipod to itunes you should be able to delete anything you want on there...it'll give you a list of tracks just like your regular itunes library and you can do whatever you want...
just be sure to keep your ipod software up to date when it prompts you and everything should work just fine...
