I am traditionally not a morning person...But, since I don't sleep, and everyone I talk to is in another part of the world, I have become one...And since I don't smoke anymore, I have another addiction...

Coffee...

This is how I make my Java...

7 Tablespoons of Sugar
2 Tablespoons of Cool Whip

And wahlah..! Welcome to a world where you can stay up 20 hours of the day..! I also occasionally put caramel flavoring or cocoa/chocolate flavoring in, when I'm feeling EXTRA purky..!

Cheesebreads!

In fact a very basic cheese pizza!

Just take a piece of bread (or 4+ like me), spread with tomato paste, then cover with grated cheese! It is best to grate the cheese fresh, it melts better and gets a nice "oil".

Whip it in the microwave on HIGH for a minute and 15 seconds, or in the griller until the cheese has properly melted and formed one gigantic pool.

Goes great with a glass of red cordial, for lunch!

You can vary it by adding cut up ham, leftover bits of roast pork, beef, lamb, goat.

And if you wrap it in half just before eating- your own calzone!!!

Anyhow, can you tell I'm Italian? Here's one of my mamma's recipes!

Tortellini with Tomato Basil Sauce

This recipe serves: 4

Preparation time : 10 minutes

Cooking time : 25 minutes


Ingredients
2 teaspoons olive oil
1 large onion, chopped
15 ounces chopped, canned tomatoes, undrained
12 ounces frozen cheese tortellini
1/4 cup chopped, fresh basil
2 tablespoons freshly grated Parmesan cheese
salt to taste
freshly ground black pepper


Cooking Instructions
1. Bring a large pot of salted water to a boil.

2. In a large skillet, heat the oil over medium-heat.
Add the onion and cook, stirring, until well browned,
about 10 minutes. Add the tomatoes and their juices and bring
to a boil. Reduce the heat to medium-low and simmer, stirring
occasionally, until the sauce is slightly thickened, about 5 to
10 minutes. Season with salt and pepper.

3. Meanwhile, cook the tortellini until al dente (check cooking time
on package and subtract 1 or 2 minutes). Drain and transfer into a
large bowl. Toss with the tomato sauce and basil. Adjust the seasoning
with salt and pepper.

4. Sprinkle with the Parmesan cheese and serve immediately.

Haha, well I don't cook. The only thing I make, and make well, is green chili chicken enchiladas. The guys LOVE it when I make those, but that's all I have. My man does all the cooking...all the cooking. He's on it by the time I get home from work...I'm spoiled.

Although I don't mind helping out in the kitchen and I'm pretty good.
