What's best for fried foods..?

What's best for fried foods..?
It has occurred to me that I love fried chicken...
I know, a black dude that loves fried chicken is hard to come by these days... :p
I don't eat it everyday, but 2, maybe 3 times a week, I'm cooking in the deep fryer...I'm healthy now, but I know that this may not always be the case...When I go to the grocery store, I usually get 'Canola' oil...I have no idea what the difference is between the different types, I just get the Canola cause its 2.50 a quart...
What's the healthiest oil to get if one MUST have fried foods..? Maybe there's somewhere here that has had some kind of experience in this and can recommend something besides moderation...

can't fry with olive oil! Its got a very low "smoke" point. . . canola is the most common choice for healthier frying . . . avocado oil (rare and expensive) apparently has the highest smoke point of all.Sir Jig-A-Lot wrote:well yeah,olive just tastes mo better.

rice bran oil is the healthiest edible oil known to man. It is also damn expensive.
My favorite sushi place uses it for tempura, and it tastes fantastic.

That's why I love coming here...This is why I beg folk to post...I have been frying food damn near my whole life, and had you asked me anything about a smoke point, the best answer you would have gotten would have been full of smoke itself...

Grapeseed oil's pretty good....it's not too strong in flavour and it dont pack on the pounds like some other oils. But man, truly, if ur gonna eat chicken skin a lot then you gonna have to step up the old exercise routine....
