Kid, Lucas' blueprints for the first 3 flicks are borrowed from at least two of Kurosawa's great period films. One of them is Yojimbo I haven't seen the whole piece, but I have read in several places that the cantina scene was...errr..."a reference" to a powerful scene in this movie (both in dialogue and...arm slicing).
The reluctant hero-droids and scene transition sequences were taken from The Hidden Fortress, in which two peasants (one tall and lanky, the other one short and bulky) become an essential part of the whole story. This one I DID see and I recommend it, not just for SW geeks, it just happens to be a great flick, both in storytelling as well as visuals.

According to Lucky Lucas himself, the word 'Jedi"comes from 'Jidai Geki' a phrase for Japanese period films. Hardly as profound, I know, but who cares at this point.
