Christmas Cookie Recipe (follow directions closely)

1 cup of water
1 tsp baking soda
1 cup of sugar
1 tsp salt
1 cup of brown sugar
2 tsp lemon juice
4 large eggs
1 cup nuts
2 cups of dried fruit
1 bottle Jose Cuervo Tequila

Sample the Cuervo to check quality.

Take a large bowl, check the Cuervo again, to be sure it is of the
highest quality, pour one level cup and drink.

Turn on the electric mixer... Beat one cup of butter in a large fluffy
bowl.

Add one teaspoon of sugar... Beat again.

At this point it's best to make sure the Cuervo is still OK, try
another
cup .... just in case.

Turn off the mixerer thingy.

Break 2 leggs and add to the bowl and chuck in the cup of dried fruit.
Pick the frigging fruit off floor... Mix on the turner. If the fried
druit gets tuck in the beaterers just pry loose with a drewscriver.

Sample the Cuervo to check for tonsisticity. Next, sift two cups of
salt, or something. Who Giveshz a sheet. Check the Jose Cuervo.

Now shift the lemon juice and strain your nuts. Add one table. Add a
spoon of sugar, or somefink. Whatever you can find. Greash the oven.
Turn the cake tin 360 degrees and try not to fall over. Don't forget
to
beat off the turner.

Finally, throw the bowl through the window, finish the Cose Juervo and
make sure to put the stove in the dishwasher.

CHERRY MISTMAS!

Last week I was extremely busy with study (and even this week), and didn't have much time to cook, except Tuesday which was Anzac Day and had no lectures. So I had some time then to make something REEAALLLY BIG to last me all week.

I wanted to do something with lamb chops, but not the usual casserole with three veg.

I read :study: about an apple being used in a "colonial" pot roast lamb recipe, and took a cue from that to whip up my own idea........... :idea:


So instead of veg, I cleared the fruit crisper in the fridge of 3 pears and 9 apples!


It gives a nice twist, nice and sweet and very warming on a cold rainy night.


Apple Lamb Chop Casserole

Serves 4, or dinner for 4 days, cdr /wink.gif" style="vertical-align:middle" emoid=";)" border="0" alt="wink.gif" />


Use a BIG saucepan for this, IMPORTANT!


Ingredients

1.5-2 kg of lamb forquarter chops
1 onion, chopped
1 tomato, chopped
3 pears, cored and diced
9 apples (eg. Bonanza, Jonathon, Pink Lady, Royal Gala- whatever you have. These were the ones I had), cored and quartered unevenly
2 potatoes, roughly chopped (nice and chunky)
1 tablespoon tomato paste
1 425g tin tomatoes
1 teaspoon dried rosemary
1 teaspoon dried sage
sprinkle of Tuscan seasoning (I had a little left, so chucked it in)
good dash of pepper
salt to taste
425ml water (basically fill the tomato tin)
2 tablespoons olive oil
butter for frying


Method

-Prepare fruit & vegetables
-Saute lamb chops in olive oil, set aside
-Turn down heat and fry onion in butter until soft, then increase heat to medium
-Fry pears, squash them a bit
-Add chopped tomato and fry
-Add tomato paste and stir in
-Add herbs, lower heat
-Add tinned tomatoes and squish
-Add potatoes
-Throw in apples, stir through
-Pour in the water, stir through evenly
-Add pepper and salt
-Place in lamb chops and mix around so they are buried
-Simmer for 1 1/2 hours



Serve with pasta, rice, couscous, or manestra (they look like little footballs). I used manestra as it was a bit different, and you can cook them in the actual saucepan so they soak up the sauce (and save on washing up! :mrgreen: )
